The perfect cookie for any Snapchat activation event.
Below is a designed experience for a Snapchat launch at the University of Arizona, where I replaced printed flyers with edible treats which reflected Snapchat’s marshmallow-ey brand and promoted sustainability. The cookie recipe was written for the event and features a marshmallow gooey layer of yellow frosting sitting on a graham cracker cookie with a layer of chocolate in between which snaps when you bite into it.
Using a laser cutter, I created stencils to use as guides for the pastry chefs who traced the outline of the logo onto the frosting using a food safe marker.
Snapchat Cookie Recipe
For the cookie:
One sleeve graham crackers
2 1/3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 stick unsalted butter, room temperature
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
For the royal frosting:
4 cups confectioners’ sugar
3 large egg whites
½ teaspoon cream of tartar
A pinch of salt
2 cups chocolate chunks
Make the graham cracker crumbs: Using the end of your rolling pin, turn the graham crackers into dust by smashing them with the end un a deep bowl.
Combine the dry ingredients: Combine the graham cracker crumbs, flour, salt, and baking soda using a whisk.
Beat the butter and sugars: Beat together the granulated sugar, brown sugar, and softened butter until combined and thick.
Mix in the dry ingredients: Add the graham cracker and flour mixture. Combine flour until no more raw four is visible.
Chill the dough: Cover the bowl and refrigerate for one hour.
Mix in the eggs and vanilla: Add the eggs and vanilla to the butter-sugar mixture and beat until no clumps remain.
Heat the oven to 360F: Place your rack in the middle of the oven. Line two baking sheets with parchment
Add the dough: With your dough rolled out, cut it into the desired shape using a pizza cutter and then spread them out 3 inches apart on your baking sheet.
Bake the cookies: Bake the cookies for 11-13 minutes.
Let cool for at least one hour
Add the chocolate layer: Using a double boiler, melt the chocolate. Once melted, spread a thin layer over the cookie by adding a spoonful of chocolate on each cookie and then spreading it out using a butterknife.
Wait for it to cool completely before applying frosting.
Decorate: combine the ingredients thoroughly and then apply using a piping bag in any shape.
